Penn State’s Department of Geography has made their Open Web Mapping course available online for free.
From the course outline:

Lesson 4: Extensible Markup Language (XML)
Lesson 5: Advanced Web Map Servers
Lesson 6: Geographic Markup Language (GML)
Lesson 7: WFS Revisited
Lesson 8: Building a Web Mapping Application
Lesson 9: Building a Thin Custom Web Mapping Client
The course materials/lectures are all available online, and the course materials look really good. If you have an interest in the subject I highly recommend you check it out.
There are also a couple of open courseware classes on GIS available from MIT:
- Environmental Engineering Applications of Geographic Information Systems
- Spatial Database Management and Advanced Geographic Information Systems
The Spatial Database Management course has been around for a while, but I’m pretty sure the Environmental Engineering Applications is relatively new.
